Brie and Apricot Grilled Cheese

This is a bit of a departure for us. Typically our recipes are for utlra healthy dishes. But today is Grilled Cheese day in the US so we’re branching out a bit with a recommendation that although it’s delicious should probably be eaten in moderation.

All ingredients room temperature. Makes 4 sandwiches. Pairs well with salad.

 Ingredients

  • 4 teaspoons butter
  • 8 slices sourdough bread
  • 3 tablespoons apricot jam, more or less to taste
  • 5 oz. Brie - slice and remove the rind while cold (spreads easier warm) 

Directions 

  1. Butter one side of each bread slice.
  2. Flip butter side down, spread a thin layer of jam on half of the slices, cheese on the other side.
  3. Match the jam slices with the cheese slices.
  4. Heat a large pan or griddle on medium for 1-2 minutes.
  5. Place sandwiches on pan to cook without crowding.
  6. When the cheese has begun to melt and the bread is a golden brown, flip sandwiches. (approximately 2 minutes).
  7. Press down on each sandwich with a spatula and cook until second side is golden brown (approximately 1 minute).
  8. Remove from heat, cut in halves and serve immediately.
